 APPLE PIE

                      An apple pie is a pie in which the principal filling ingredient is apple, originated in England. It is often served with whipped cream, ice cream, or cheddar cheese. It is generally double-crusted, with pastry both above and below the filling; the upper crust may be solid or latticed. 


Ingredients

Pastry:

● Refined flour - 115gm

● Butter - 85 gm 

● Salt - a pinch 

● Iced water - 45ml


Filling:

● Tart apples - 450gm

● Sugar - 225gm

● Refined flour - 10gm

● Nutmeg - a pinch

● Butter - 20gm


Method

1. Rub fat into flour.

2. Add water gradually to form a stiff dough. Mix well.

3. Chill for 10 minutes in refrigerator.

4. Roll out thinly. Cut two rounds, one for lining and the other for top crust to fit a 18 em pie tin.


◆ Filling

1. Arrange apples in pie tin that has been lined with pastry.

2. Sprinkle sugar, flour and nutmeg over apples.

3. Add melted butter.

4. Cover with pastry, brush top with milk, make one or two cuts to allow steam to escape.

5. Bake at 220°C (about 425°F) for 15 minutes.

6. Lower temperature to 175°C (about 350°F) and bake for 30 minutes more or until apples are done.
