CHOCOLATE FUDGE - How to make a Chocolate Fondant

 CHOCOLATE FUDGE

Ingredients

● Granulated sugar - 450gm 

● Fresh milk - 300ml 

● Cocoa - 30gm 

● Liquid glucose - 30ml 

● Butter - 55gm 

● Vanilla - 1/2Tsp

● Cream of tartar - a pinch 


Method

1. Put sugar, milk, cocoa, glucose and butter into a thick-bottomed pan.

2. Heat gently until all the sugar dissolves completely.

3. Bring to a boil and cook until temperature reaches 155°C (about 240°F) or soft ball consistency.

4. Remove pan from heat and leave to stand until all bubbles subside (about 5 minutes).

5. Add vanilla and beat with a wooden spoon until mixture is thick and creamy.

 6. Pour into a buttered tin. When cool mark into squares; cut into pieces when cold.
