TEA CAKE


◆ Ingredients

● Butter - 180gm

● Castor sugar - 180gm

● Grated lemon rind - 1/2Tsp

● Grated orange rind - 1/2Tsp

● Vanilla - few drops

● Eggs - 3

● Refined flour - 225gm

● Baking powder - 1/2Tsp

● Salt - a pinch

● Milk - 5Tbsp


◆ Method


1. Soften butter with vanilla, lemon and orange rind.

2. Gradually beat in sugar and continue beating until soft, white and fluffy.

3. Add eggs one at a time, beating well each time.

4. Sift flour, baking powder and salt. Fold into mixture alternately with milk.

5. Turn into well-greased tin. Bake for 50-60 minutes in a moderate oven 190°C (375°F approx.).

6. Let cake stand in tin a few minutes before turning out.
