ORANGE MUFFINS

 ORANGE MUFFINS                   

                                   A muffin is an individual-sized, baked product. It can refer to two distinct items, a part-raised flatbread that is baked and then cooked on a griddle and a cupcake-like quick bread that is chemically leavened and then baked in a mold.


Ingredients

● Refined flour - 115gm

● Baking powder - 1/2Tsp

● Butter or Margarine - 85gm

● Sugar - 115gm

● Eggs - 2

● Milk - 50ml

● Orange juice - 50ml

● Orange rind (chopped fine) - 1Tsp


Method

1. Cream margarine and sugar.

2. Blend in beaten egg and orange rind.

3. Sift together flour, baking powder and salt.

4. Add alternately with milk and orange juice, mixing well each time.

5. Fill greased muffin pans.

6. Bake at 205°C (400°F approx.) 15 to 20 minutes.
