Stollen
Stollen is a fruit bread of nuts, spices, and dried or candied fruit, coated with powdered sugar or icing sugar. It is a traditional German bread eaten during the Christmas season, when it is called Christstollen.

◆ INGREDIENTS :-
- Refind flour :- 250gm
- Castar sugar :- 50gm
- Yeast :- 5gm
- Salt :- 3gm
- Butter :- 75gm
- Milk :- 125gm
- Cinnamon :- 1/4tsp
- Vanilla :- 1/4tsp
- Mixed peel :- 2tsp
- Raisins :- 20gm
- Melted butter :- 13gm
- Marzipan :- 140gm
- Rum :- 20ml
◆ METHOD :-
- To prepare the fruits - Combine the fruit & Rum. Cover & set aside at room temperature for upto 12hrs.
- In a small bowl dissolve yeast in warm milk , let stand until creamy about 10min.
- In a large bowl , combine the yeast mixture with salt , sugar , butter & flour beat well.
- Add the remaining flour , 1/2 cup at a time , stirring well after each addition. When the dough has began to pull together turn it out onto a lightly floured surface & add rum and fruit mixture . Continue kneading until smooth about 8min.
- Lightly oil a large bowl place the dough in a bowl , and turn to coat with oil , cover with a damp cloth & let rise in a warm place until doubled in volume about 1hr.
- Grease the cookie sheet . Take the dough and turn in out onto a lightly floured surface . Roll the marzipan into a rope & place it in the center of the dough fold the dough over , cover it let rise until double volume.
- Bake in preheated oven for 10 min then reduce heat to 150℃ & bake for 30-40min or until golden brown.
- Allow loaf to cool on a rack . Dust with sugar & cinnamon.
