BRANDY SNAP
◆ INGREDIENTS
- BUTTER - 28gm
- BROWN SUGAR - 28gm
- GOLDEN SYRUP - 28gm
- FLOUR - 25gm
- GROUND GINGER - 1/4tsp
- LEMON JUICE - 1/4tsp
◆ METHOD
- Mix the butter , brown sugar & golden syrup into a heavy bottom pan , Allow heat until butter melts about 10-15min.
- Cool slightly butter mixture & sieve the flour in mixture.
- Add the lemon juice & mix well & add the ground ginger.
- Drop flour teaspoon full of the mixture into each of the prepared baking tray to make neat circle about 10cm.
- Bake for 10-15min
- Remove each tray from the oven & leave for a minute to firm slightly & the lift from baking tray . The mixture just needed to be firm enough to remove but pliable enough to shape.
- Quickly roll a circle of warm mixture around the wooden spoon having the join underneath . Press the joint lightly together to seal them slice the brandy snap off the spoon & leave it to cool
- Serve with whipped cream & strawberry.
